
Imagine what it would have been like if they'd used 16 hops!
Total accident. I picked a beer before I’d even thought about dinner. And Port Brewing Hop 15 is a very slow sipper. Fifteen different hop varieties every 15 minutes? Holy lupulus, Batman!
So I was still sipping on it as sloppy joes came together. Bleh. Don’t go there.
The sloppy joes were pretty good but need even more tweaking than I engaged in. The recipe on hand called for 1/2 cup ketchup, 1/2 cup chili sauce, 2 T mustard, 2 T sugar, and 2 T vinegar. I mixed all that together and took a whiff. Whoa. All ketchup. If I wanted ground beef drenched in ketchup, I would have just squirted that into the pan and not bothered with the rest of the stuff. So I added quite a bit of paprika, some garlic powder, onion powder, salt, and pepper. Stuff you’d put in a BBQ dry rub.
But ultimately this was too sweet and too vinegary. Not surprising since ketchup is made with vinegar, mustard is made with vinegar, and vinegar is made with vinegar. And then ketchup has sugar, and sugar has sugar. So I could work to tweak this next time, or just search for a different recipe altogether. I suspect the latter option will win out.
Anyhoo, the very vinegary sloppy joes didn’t like the very piney, citrusy, bitter Hop 15. Clash! I didn’t waste more than a couple sips before I set the beer aside to return to after I’d finished with dinner (which featured french fries on the side, BTW).
